if i stell from my employee he fires me then ask me for ten thousand dollars not to press charges

Assuming there were others present who can testify to the allegation, inform him that if he charges you, then you will respond by charging him with 'Attempted Blackmail'.

If some one asks you to pay an amount or they will sue you for a larger sum. This is strong arming and extortion and you should hire an attorney.This is also a form of racktering so if this took place and if they were dumb enough to send you a threating letter.I think you could have a winning case.
